Ingredients

  • 1 large headromaine, chopped
  • 2 cupsspring mix or arugula
  • 1 cupcherry tomatoes, halved
  • 1 Persian or smallcucumber, sliced
  • 1avocado, diced
  • ½ cuppickled red onions
  • 1 cupchickpeas, drained and rinsed
  • ⅓ cupfeta or goat cheese
  • toasted sunflower seeds

Dressing

  • 4.5 tbspolive oil
  • 1.5 tbsplemon juice
  • 1.5 tbsppickled onion brine
  • 1.5 tspDijon mustard
  • 1.5 smallgarlic cloves, grated
  • to tastesalt (depends on how salty the red onion brine is)
  • to tasteblack pepper

Instructions

  1. Whisk together the dressing ingredients.

  2. In a large bowl, combine romaine, spring mix, tomatoes, cucumber, avocado, chickpeas, pickled red onions, and cheese.

  3. Toss lightly with the dressing.

  4. Top with toasted sunflower seeds.
